Quinoa Burrito Bowl

Wow! Easy and Flavorful way to make Quinoa with Chicken….One Pot, Complete Meal!

Here are a few thoughts on the methods I used when preparing this dish for my family….

I placed my ingredients on the counter so I can be sure of what I had. Bag 1 with chicken thighs, Bag 2 with broth/tomatoes and seasonings, Bag 3 with Quinoa, Bag 4 with Black Beans and Green Peppers, Bag 5 with Cheddar Cheese

Second, I read over the menu card.

For my cooking process, I used the crockpot on high for three hours. I just followed the simple instructions on the Recipe Card. It was very easy to do.

Spray inside of 4-5 quart crockpot with cooking spray.

Add chicken and bag of broth/tomatoes, etc.

Cook on HIGH 3 hours or LOW 5 hours.

Shred chicken (you can use 2 forks to pull apart in the crockpot), add quinoa and beans and cook on LOW 1 ½ hours. *

*If you feel it is getting dry, add some water, chicken or vegetables stock. Heck, even some white wine could be nice! Quinoa will absorb liquid and become a bit solid. I prefer it to be moister.

Put cheese on top, cover, and cook until cheese is melted. Serve! You can top with salsa, sour cream, and anything else you like!!

My suggestion would have a Crispy Salad with a Vinaigrette Dressing to accompany the meal. It would be very pleasing to your taste buds.

Enjoy!

And Remember….

A. Get the kids to help set the table. Placemat, Fork, Knife, Folded Napkin, Cup or Glass for their drinks. Teach them: Forks go on the left and knives and spoons go on the right. (To remember: “Fork” has four letters, as does “left”; “knife” and “spoon” both have five letters, as does “right.”) Folded Napkin under the Fork on the left side. A set table sets up a nice protocol for family time. Not always easy to do and it gives kids a chance to share about their day.

B. NO CELL PHONES...that includes mom and dad!
